This might be my new favorite way to upgrade store-bought mashed potatoes! I start with Bob Evans mashed potatoes and turn them into a creamy, cheesy baked side dish with cream cheese, sour cream, butter, and LOTS of Parmesan.

And don’t skip the Parmesan on the bottom of the dish — it creates the BEST buttery, cheesy layer!

Bake at 350°F until everything is hot and the top is golden brown.

Easy enough for a weeknight but definitely good enough for Thanksgiving, Christmas, or your next family dinner!
